Pecan balls from Eat Me




Craving something sweet on the weekend, but not in the mood for chocolate, I turned to my new copy of Xanthe Milton's Eat Me to see if there was something quick and easy I could turn to. I found it on the very last page in the very last recipe in the whole book (I flicked through all the cake, cake and cake).

She calls them "Pecan Puffs"; I prefer the term pecan balls as, well, it's not like it's puff pastry or anything. These are like sweet little dough balls with a hard crunch - and the perfect size for popping in your mouth whole with a cup of coffee. I like to think they're low fat, because there's not really that much butter or sugar in them, but I may be kidding myself. But these are light and moreish, and it appears everyone else seems to think so; the whole batch vanished yesterday afternoon in a matter of minutes.



Pecan balls (or pecan puffs as Eat Me calls them)

55g unsalted butter
2tbsp caster sugar
1 tsp vanilla essence
110g pecan nuts
110g flour
icing sugar to roll in (optional)

Preheat the oven to 180C and have a large non-stick or greased oven tray to hand. Cream the butter and sugar together until pale and fluffy and add the vanilla. Strictly speaking, the recipe says you should grind the nuts in a food processor, but I just chopped them up nice and rough. Add the nuts, and then the flour, and then stir well with a wooden spoon until it comes together as a dough. Roll teaspoon size clumps of the dough into balls and place on the baking sheet. Bake for 30 minutes. For added decadence, roll the balls in icing sugar while still hot and pop back in the oven to glaze them for an extra 2 minutes - I suppose you could do the same with demerara sugar for a little more crunch, or leave them plain (they're still satisfying as they are).



I suggest you eat these fresh from the oven, mug of steaming tea or coffee in hand while contemplating the weather and wondering how on earth it is possible that it can snow in April. Happy snow showers -

Oh and as soon as I read this I thought about the song from the second Adams Family movie, where the kids are at camp and have to put on a Thanksgiving play and they are singing....
